Did you say healthy-ish comfort food?  This easy-peasy mug cake is quick and simple to make. But remember it is still only a ‘sometimes’ food!

Ingredients:

  • 4 tablespoons almond meal
  • 1 tablespoon rice malt/ maple syrup
  • 2 tablespoons cacao powder 
  • 2 tablespoons almond milk
  • 1 egg
  • 1 tablespoon almond butter
  • 1/4 teaspoon vanilla extract (optional)

Method:

  1. Place all ingredients in a large mug and mix well
  2. Cook in microwave on high for 80 seconds
  3. Add coconut yoghurt if you like and enjoy!
