Anzac biscuits – Paleo style!
Not to go against tradition, but I don’t eat oats! This Paleo version of Anzac biscuits are amazingly delish!
1 cup Almond meal
1 cup unsweetened desiccated/ shredded coconut
1 cup crushed almonds
1/4 cup coconut oil
1/4 cup honey
1 tsp baking powder
1 tsp water
> Preheat oven 120deg celcius and line tray with baking paper
> In a large bowl mix together almond meal, coconut and almonds
> In a small saucepan (or microwave) melt the coconut oil and honey together
> Take saucepan off head and add baking powder and water together
> Add to oil mix, stir until it foams up and turns white-ish
> Pour this into dry ingredients, wix til well combined
> If too dry add a bit more melted oil and honey
> Take tablespoon-fulls of mixture, roll into balls and place on baking tray and flatten gently. Allow enough space to expand
> Place tray in oven and bake for 35-40mins or until golden brown
> Allow to cool on baking tray
** I eat then just as they are cool enough to eat but not too hard – sooo yuuummmm!
Store in an air tight container for up to 5 days – If they last that long!! Enjoy!!
