Nutrition Tip : Paleo Banana Bread – Easy Healthy

Ingredients
1/3 cup (80ml) coconut oil
4 ripe bananas, mashed
4 free range eggs
1/2 cup (125gm) almond butter
1/4 cup (30gm) coconut flour
1/4 cup (30gm) almond meal
1 tblsp ground cinnamon
1 tsp baking soda
1 tsp baking powder
Method
Pre-heat oven to 180oC. Grease 23 x 12cm loaf pan with coconut oil spray.
In a large bowl, combine banana, eggs, almond butter and coconut oil and mix well with hand mixer until smooth. In medium bowl, combine all dry ingredients and mix well.
Using a wooden spoon, add dry ingredients to wet an mix until just combined, don’t over mix. Poor batter into prepared pan and bake in oven for 35-40 mins.
Test if ready by inserting a skewer into centre, when comes out smooth it is done. Flip out onto cooling rack and allow to cool completely before cutting.
