Guilt-free Whoopies

Light and fluffy these delightful whoopie pies are a great Christmas guilt free dessert! 

Cocoa whoopie cakes with coconut cream and raspberries

Ingredients

  • 1/3 cup melted coconut oil
  • 1/3 cup of maple syrup
  • 4 eggs
  • 1/2 cup coconut flour
  • 2 teaspoons of baking powder
  • 1/4 cup raw cocoa powder

Pre-heat you’re oven to 180°C/160°C fan forced.

Line a large baking tray with nonstick baking paper.

Mixed in the coconut oil, maple syrup, eggs, flour, baking powder and cocoa until well combined.

The mixture will be soft and sticky. Using damp hands, mould into 7 cm rounds and place on prepared to trays.

Bake for 12 to 15 minutes or until cooked through and firm. Cool on tray.


To make the cream – place unopened tin of coconut cream in the fridge overnight to firm. Open tin and carefully scoop out top layer of cream that has set, into a bowl. Add vanilla essence or peppermint or plain is great too!

You can use the left over water to add to your smoothies!
