Nutrition Tip : Healthy comforting veggie soup

Tomato based, healthy vegetable soup

Ingredients

500gm carrots, thinly sliced

2 medium tomatoes, diced

2 large celery stalks, sliced

1 large capsicum, chopped

3 spring onions, chopped

3 cups cabbage, chopped

1 clove garlic, crushed

Half bunch parsley, chopped

Salt and pepper to taste

1 litre salt reduced chicken or vegetable stock (homemade)

400gm can tomatoes

Method

In a large pot, fry off garlic and celery to release flavours. Add and heat through carrot, capsicum and spring onion. Add the rest of the chopped vegetables add herbs and pepper to taste. Stir through stock and 500ml water. Cover and bring to boil. Reduce heat and simmer for 12 mins. Stir through canned tomatoes and simmer for further 5 mins. Season with salt to taste.  Simple! And you can freeze excess.
