Pancakes!

Serves 1 – 15 Minutes – Vegan and Vegetarian Friendly
Ingredients
- 1 medium banana
- 2 tbsp coconut flour
- 1 tbsp almond milk
- 3 tbsp vegan protein powder
- 1 tbsp coconut yoghurt
- 1/4 piece lemon, squeezed
- 1/2 tsp cinnamon
Method
- Add the banana to a bowl and mash until it resembles a smooth consistency. Add the protein powder, coconut flour and almond milk and mix well.
- Heat a non-stick frying pan and add the batter. Cook on one side for a couple of minutes or until it begins to set. Flip and heat the other side until cooked.
- Serve on a plate topped with a dollop of yoghurt, lemon juice and a sprinkle of cinnamon. Enjoy.
