Pancakes!

Pancake stack

Serves 1 – 15 Minutes – Vegan and Vegetarian Friendly

Ingredients

  • 1 medium banana
  • 2 tbsp coconut flour
  • 1 tbsp almond milk
  • 3 tbsp vegan protein powder
  • 1 tbsp coconut yoghurt
  • 1/4 piece lemon, squeezed
  • 1/2 tsp cinnamon

Method

  1. Add the banana to a bowl and mash until it resembles a smooth consistency. Add the protein powder, coconut flour and almond milk and mix well.
  2. Heat a non-stick frying pan and add the batter. Cook on one side for a couple of minutes or until it begins to set. Flip and heat the other side until cooked.
  3. Serve on a plate topped with a dollop of yoghurt, lemon juice and a sprinkle of cinnamon. Enjoy.
