Healthy Granola
Everyday Cereal
Makes 7 cups
- 2 cups Quinoa flakes
- 1 cup Oats (optional)
- 1/3 cup melted coconut oil
- 3 tablespoons Maple Syrup (I use Queens Sugar Free)
- 1/2 tsp mixed spice
- 1 cup mixed raw nuts (flaked almonds, walnuts, pecans)
- 1 cup dried apricot and dates chopped
- 1 cup dried goji berries
- 1 cup LSA
> Preheat oven 200deg/280deg fan-forced and line 2 large baking trays with non-stick baking paper. > Place quinoa flakes, oats, coconut oil, maple syrup, mixed spice, nuts, apricots and dates together in a large bowl. Mix well.> Spread over trays.> Bake for 12-15 minutes, or until crisp and golden brown. Cool on trays, then roughly break into smaller pieces. > Then add goji berries and LSA.
Store in an airtight container, room temp for up to 2 weeks.
