Quinoa lettuce wraps

Cooked quinoa, black beans and delicious seasonings come together, hugged in crisp lettuce leaves and topped with smooth hummus and spring onions to create a refreshing meal or snack!


  • 1 cup raw quinoa
  • 1 can black beans, drained and rinsed
  • 1 medium lemon, juiced
  • 1 teaspoon paprika powder
  • 1 teaspoon cumin
  • ½ cup fresh chopped parsley
  • Salt and ground black pepper
  • ½ tsp chilli flakes
  • Fresh crisp lettuce leaves of your choice
  • ¾ cup hummus
  • 2 spring onions cut finely


  1. Cook the quinoa according to the packet instructions.
  2. Rinse and drain the black beans. In a medium-sized bowl, combine the black beans with the quinoa, lemon juice, paprika powder, cumin, and parsley. Season with salt, pepper, and red chilli flakes.
  3. Equally fill the quinoa mixture into the lettuce leaves and top with some hummus and spring onions. Serve and enjoy.
