White Bean Stew
White Bean Stew

This delicious white bean stew will not only comfort and warm you up on those cold winter evenings, but will surely fill you up too!


  • 2 tbsp olive oil
  • 1 large brown onion, finely chopped
  • 2 celery sticks, finely chopped
  • 2 carrots,  finely chopped
  • 2 garlic cloves, crushed (or jar)
  • 2 x 400gm cans Cannellini beans, drained and rinsed
  • 1 x 400gm can diced tomatoes
  • 1 x 400gm tomato Passata sauce
  • 2 tbsp rosemary chopped (Teamsters I have tones in my garden if you like)


Heat half the oil in a 1.5L saucepan over medium high heat. Add onion, celery, carrots and garlic. Cook, stirring, 5mins or until almost tender. Stir in remaining ingredients, beans, tomatoes, passata and rosemary. Bring to the boil. Reduce heat to medium. Cook, stirring occasionally for 40mins or until liquid reduces. Season to taste with salt and pepper.
